Know what every wine really earns, channel by channel

Actual cost per bottle, gross margin per product and per sales channel, and inventory valued at cost. The figures come from what the winery already records: harvest, supplies, labour, bottling and orders.

From grape to margin

Four steps from lot cost to product margin

Every cost recorded in the cellar accumulates on the lot and travels with the wine to the bottle that is sold.

  1. Cost per lot

Grapes, supplies, labour, energy, barrel depreciation and overhead accumulate on each vessel.

  2. Cost per bottle

At bottling, the wine cost plus dry goods gives the actual cost of every bottle.

  3. Sales by channel

Orders and exports are grouped into direct-to-consumer, B2B, e-commerce and export.

  4. Margin per product

Revenue minus actual cost: gross margin and margin % per SKU and vintage, with the variance against standard cost.

What you see

The numbers the person who decides needs

  • Actual cost per bottle, broken down

Grapes, labour, supplies, energy, barrels, overhead and dry goods per batch, with the average cost trend over the last five vintages.

  • Gross margin per product and channel

Revenue, units, average price and margin per SKU across direct-to-consumer (cellar door, own web shop and wine club), B2B, e-commerce and export. Exports come in with the Export add-on.

  • Actual vs standard cost

Compares the actual cost of each SKU with its bill of materials and flags products that run more than 10% over.

  • Inventory valued at cost

Supplies, finished goods and bulk wine at weighted average cost, with finished goods also at sale price. Items with no cost recorded are listed separately, never as zero.

  • Work in progress by vessel

Value of the bulk wine in the cellar, average cost per litre and per bottle equivalent, and the vintage cost close.

  • Break-even and target price

From each product's bill of materials and the month's fixed costs: break-even units, target price and contribution margin.

Questions from owners

Which method is used to value inventory?

Weighted average cost: every supply receipt recalculates the unit cost, and finished goods take the average cost of their bottlings. Cepaos does not value by FIFO cost layers.

What if a product has no cost recorded yet?

That SKU's margin shows as “—” and its revenue is reported as sales without cost. A missing cost is never treated as zero, so the margin is not inflated.

Do wine club and cellar door sales show as separate channels?

No: in the margin analysis, cellar door, own web shop and wine club are grouped together as direct-to-consumer. The other channels are B2B, e-commerce and export.

Do I need to buy anything extra?

Costing, margins and valuation are in the core modules. The export channel is fed by recorded exports, which use the Export add-on.
